Ingredients

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1 teaspoon salt

1/4 cup unsalted butter, cold and cubed

3/4 cup buttermilk, chilled

1 tablespoon honey (optional)

Extra flour for dusting

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

Mix Dry Ingredients: In a large mixing bowl, combine the all-purpose flour, baking powder, baking soda, and salt. Whisk together until well mixed.

Cut in the Butter: Add the cold, cubed butter to the dry ingredients. Using a pastry cutter or your fingertips, work the butter into the flour mixture until it resembles coarse crumbs with some pea-sized bits remaining.

Add Buttermilk: Make a well in the center and pour in the chilled buttermilk. If you like a hint of sweetness, add honey at this stage. Stir gently with a fork until just combined; be careful not to overmix.

Bring the Dough Together: Transfer the dough onto a lightly floured surface. Gently knead the dough a few times (about 5-6 times) until it comes together. Pat it into a rectangle about 1 inch thick.

Cut the Biscuits: Use a floured biscuit cutter (or a glass) to cut out biscuits from the dough. Press straight down without twisting to ensure they rise well. Gather the scraps, re-knead, and cut out more biscuits until the dough is used up.

Bake: Place the biscuits on the prepared baking sheet, ensuring they are touching slightly for soft sides. Bake in the preheated oven for about 12-15 minutes or until golden brown on top.

Cool and Serve: Remove from the oven and let them cool slightly on the baking sheet. Serve warm with butter, jam, or your favorite toppings!
