Ingredients
  

2 cups all-purpose flour

1/2 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/2 cup unsalted butter, melted and slightly cooled

1 large egg

1 teaspoon vanilla extract

1 cup buttermilk (or 1 cup milk + 1 tablespoon lemon juice, mixed and let sit for 5 minutes)

1 1/2 cups fresh or frozen blueberries (if using frozen, do not thaw)

Optional: 1 tablespoon coarse sugar for sprinkling on top

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a 12-cup muffin tin with paper liners or grease them lightly.

    Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, and salt until well combined.

      Combine Wet Ingredients: In a separate bowl, whisk together the melted butter, egg, vanilla extract, and buttermilk until smooth and fully blended.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients. Gently fold them together using a spatula or wooden spoon until just combined; be careful not to overmix. Some lumps are okay.

          Add Blueberries: Gently fold in the blueberries, being careful not to crush them.

            Fill Muffin Tin: Divide the batter evenly among the 12 muffin cups, filling each about 2/3 full. If desired, sprinkle coarse sugar on top of each muffin for a little crunch.

              Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

                Cool: Once baked, remove the muffins from the oven and let them cool in the tin for about 5 minutes before transferring to a wire rack. This helps them set and makes it easier to remove them without sticking.
