6 medium Granny Smith apples, peeled, cored, and sliced

1 cup granulated sugar

1/4 cup brown sugar, packed

1 teaspoon cinnamon

1/4 teaspoon nutmeg

2 tablespoons lemon juice

1 tablespoon cornstarch

1/2 cup caramel sauce (store-bought or homemade)

1 tablespoon unsalted butter, cut into small pieces

1 package (14 oz) refrigerated pie crusts (or homemade)

1 egg, beaten (for egg wash)

1 tablespoon coarse sugar (for topping)

Instructions
 

Preheat your oven to 425°F (220°C).

    In a large mixing bowl, combine the sliced apples, granulated sugar, brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Toss until the apples are evenly coated.

      Roll out one pie crust and fit it into a 9-inch pie pan. Trim any excess hanging over the edges.

        Pour the apple mixture into the crust, distributing it evenly. Drizzle the caramel sauce over the apples and dot with pieces of butter.

          Roll out the second pie crust and place it over the apple filling. Trim and pinch the edges to seal them together. Cut a few slits in the top crust to allow steam to escape.

            Brush the top crust with the beaten egg and sprinkle with coarse sugar for added crunch.

              Bake in the preheated oven for 15 minutes. Reduce the temperature to 350°F (175°C) and continue baking for an additional 30-35 minutes, or until the apples are tender and the crust is golden brown.

                Let the pie cool for at least 1 hour before slicing to allow the filling to set.
