Ingredients

1 sheet of puff pastry (thawed)

8 oz Brie cheese, cut into small wedges

1 cup cranberry sauce (homemade or store-bought)

1 egg, beaten (for egg wash)

1 tablespoon fresh rosemary, finely chopped (optional)

1 tablespoon honey (for drizzling)

Sea salt, to taste

Freshly cracked black pepper, to taste

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

Prepare the Puff Pastry: Roll out the puff pastry on a lightly floured surface into a rectangle about 1/8 inch thick. Cut the pastry into 4 equal squares (or rectangles, depending on your preference).

Assemble the Filling: In the center of each pastry square, place 2-3 wedges of Brie cheese. Spoon about 1 tablespoon of cranberry sauce over the cheese, then sprinkle with fresh rosemary, if using. Season with a pinch of sea salt and freshly cracked black pepper.

Fold and Seal: Gently fold each pastry over to form a pocket or triangle, enclosing the filling. Press the edges together to seal, ensuring no filling escapes. Use a fork to crimp the edges for an attractive finish.

Apply Egg Wash: Brush the tops of each pastry with the beaten egg to give them a golden-brown finish while baking.

Bake: Place the filled pastries on the prepared baking sheet. Bake in the preheated oven for 20-25 minutes, or until they are puffed and golden brown.

Finish with Honey: Once out of the oven, drizzle a little honey over each puff while still warm for an extra touch of sweetness.

Serve: Allow to cool slightly before serving. These puffs are best enjoyed warm, but they also taste delightful at room temperature.
