Hobo Casserole with Ground Beef & Potatoes – Quick & Delicious!

1 lb ground beef

4 medium potatoes, peeled and thinly sliced

1 large onion, diced

2 cups frozen mixed vegetables (peas, carrots, corn)

2 cups shredded cheddar cheese

1 can (10.5 oz) cream of mushroom soup

1 cup beef broth

1 tsp garlic powder

1 tsp onion powder

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 350°F (175°C).

    Cook the Ground Beef: In a large skillet over medium heat, add the ground beef. Cook until browned and no longer pink, breaking it up into crumbles with a wooden spoon. Season with garlic powder, onion powder, salt, and pepper. Drain excess fat if necessary.

      Layer the Ingredients: In a greased 9x13-inch baking dish, layer half of the sliced potatoes evenly at the bottom. Sprinkle half of the diced onion over the potatoes, followed by half of the cooked ground beef. Next, add all the frozen mixed vegetables.

        Add Soup and Broth: In a separate bowl, combine the cream of mushroom soup and beef broth. Mix well until smooth. Pour half of this mixture evenly over the vegetables.

          Repeat Layers: Repeat the layering process with the remaining potatoes, onions, ground beef, and pour the remaining soup mixture on top.

            Top with Cheese: Sprinkle the shredded cheddar cheese generously over the casserole.

              Cover and Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 1 hour. After 1 hour, remove the foil and bake for an additional 15-20 minutes, or until the potatoes are tender and the cheese is bubbly and golden.

                Garnish and Serve: Once done, take the casserole out of the oven and let it rest for about 5 minutes. Garnish with freshly chopped parsley before serving.
