Hobo Casserole with Ground Beef & Potatoes

1 lb ground beef

4 medium potatoes, diced

1 medium onion, chopped

2 cups mixed vegetables (frozen or fresh, e.g., peas, carrots, corn)

1 can (10.5 oz) cream of mushroom soup

1 cup shredded cheddar cheese

1 cup beef broth

2 cloves garlic, minced

1 tsp dried thyme

1 tsp paprika

Salt and pepper to taste

Olive oil for cooking

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the oven: Preheat your oven to 375°F (190°C).

    Brown the beef: In a large skillet over medium heat, add a drizzle of olive oil. Once hot, add the ground beef and cook until browned, about 5-7 minutes. Use a wooden spoon to break it apart as it cooks. Drain excess grease if necessary.

      Add aromatics: Add the chopped onion and minced garlic to the skillet. Sauté for an additional 3-4 minutes until the onions are translucent.

        Combine ingredients: In a large mixing bowl, combine the browned beef mixture with the diced potatoes, mixed vegetables, cream of mushroom soup, beef broth, dried thyme, paprika, salt, and pepper. Mix well to ensure all ingredients are evenly coated.

          Layer the casserole: Grease a 9x13-inch casserole dish with cooking spray or olive oil. Spoon the beef and potato mixture into the dish, spreading it out evenly.

            Add cheese: Sprinkle the shredded cheddar cheese generously over the top of the casserole.

              Cover and bake: Cover the casserole dish with aluminum foil and bake in the preheated oven for 45 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the potatoes are tender and the cheese is melted and bubbly.

                Garnish and serve: Once baked, remove from the oven and let it sit for about 5 minutes. Garnish with chopped fresh parsley before serving.
