Hobo Casserole Ground Beef Recipe

1 lb ground beef

1 medium onion, chopped

2 cloves garlic, minced

3 medium potatoes, diced

1 cup carrots, sliced

1 can (14.5 oz) diced tomatoes (with juice)

1 can (16 oz) green beans, drained

1 cup corn (fresh or frozen)

2 teaspoons Worcestershire sauce

1 teaspoon dried oregano

1 teaspoon paprika

Salt and pepper to taste

2 cups shredded cheese (cheddar or a blend)

Fresh parsley for garnish (optional)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 375°F (190°C).

    Brown the Beef: In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it apart with a spatula, about 5-7 minutes. Drain excess fat.

      Sauté Vegetables: Add the chopped onions and minced garlic to the skillet with the beef. Sauté for another 3-4 minutes until the onion becomes translucent.

        Combine Ingredients: In a large mixing bowl, combine the browned beef mixture, diced potatoes, sliced carrots, diced tomatoes (with juice), drained green beans, corn, Worcestershire sauce, oregano, paprika, salt, and pepper. Stir well until everything is well combined.

          Layer in Casserole Dish: Spread half of the beef and vegetable mixture into a greased 9x13 inch casserole dish. Sprinkle one cup of shredded cheese over this layer. Then, add the remaining beef and vegetable mixture on top, leveling it out.

            Baking: Cover the casserole dish with aluminum foil and bake in the preheated oven for 45 minutes. After 45 minutes, remove the foil and sprinkle the remaining cup of cheese on top. Return the casserole to the oven uncovered for an additional 15-20 minutes, or until the potatoes are tender and the cheese is melted and slightly golden.

              Garnish and Serve: Once done, remove the casserole from the oven and let it sit for 5-10 minutes. Garnish with freshly chopped parsley if desired, then serve hot.
