6 large eggs

1/4 cup mayonnaise

1 tablespoon Dijon mustard

1 tablespoon olive oil

1 tablespoon apple cider vinegar

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

1/4 cup fresh parsley, finely chopped

1/4 cup fresh chives, finely chopped

2 tablespoons fresh dill, finely chopped

1 tablespoon capers, rinsed and chopped (optional)

1/4 cup celery, finely diced (optional)

Lettuce leaves, for serving (optional)

Instructions
 

Boil the Eggs: Place the eggs in a pot and cover them with cold water. Bring the water to a boil over medium heat. Once boiling, cover the pot, remove it from the heat, and let it sit for 10-12 minutes. After that, transfer the eggs to an ice bath to cool for about 5 minutes.

    Peel the Eggs: Once the eggs are cool, gently tap them against the counter to crack the shells. Peel the eggs under running water to make the process easier, and then pat them dry.

      Prepare the Dressing: In a medium mixing bowl, whisk together the mayonnaise, Dijon mustard, olive oil, apple cider vinegar, garlic powder, onion powder, and a pinch of salt and pepper until smooth and creamy.

        Chop the Eggs: Roughly chop the peeled eggs into bite-sized pieces and add them to the bowl with the dressing.
