1 whole chicken (about 4-5 lbs)

1 pound baby potatoes, halved

1 lemon, quartered

6 cloves garlic, peeled and smashed

1/4 cup olive oil

2 tablespoons fresh rosemary, chopped (or 1 tablespoon dried)

2 tablespoons fresh thyme, chopped (or 1 tablespoon dried)

1 tablespoon fresh parsley, chopped (for garnish)

Salt and freshly ground black pepper, to taste

1 teaspoon paprika

1 teaspoon onion powder

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Chicken: Rinse the chicken under cold water and pat it dry with paper towels. Season the cavity generously with salt and pepper. Stuff the cavity with the lemon quarters and half of the smashed garlic cloves.

      Make the Herb Mixture: In a small bowl, mix together olive oil, rosemary, thyme, paprika, onion powder, salt, and pepper.

        Season the Chicken: Brush the herb mixture all over the chicken, making sure to get under the skin for maximum flavor.

          Prepare the Potatoes: In a large mixing bowl, toss the halved baby potatoes with the remaining smashed garlic cloves, salt, pepper, and a drizzle of olive oil until well-coated.
