1 rack of lamb (8 ribs, frenched)

2 tablespoons olive oil

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons Dijon mustard

1 cup fresh breadcrumbs (or panko)

1/2 cup grated Parmesan cheese

2 tablespoons fresh rosemary, finely chopped

2 tablespoons fresh thyme, finely chopped

3 cloves garlic, minced

1 tablespoon fresh parsley, finely chopped

Zest of 1 lemon

1 tablespoon balsamic vinegar (optional, for serving)

Instructions
 

Prepare the Rack of Lamb: Preheat your oven to 400°F (200°C). Pat the rack of lamb dry with paper towels. This ensures that the meat browns nicely when cooked.

    Seasoning: In a small bowl, combine the olive oil, salt, and black pepper. Rub this mixture all over the meat side of the rack of lamb.

      Mustard Coating: Spread the Dijon mustard generously over the seasoned side of the lamb. This not only adds flavor but also helps the crust to adhere better.

        Make the Herb Crust: In a separate bowl, mix together the fresh breadcrumbs, Parmesan cheese, rosemary, thyme, minced garlic, parsley, and lemon zest. Stir until evenly combined.
