2 tablespoons olive oil

1 medium onion, diced

2 cloves garlic, minced

2 large carrots, sliced

2 celery stalks, chopped

1 teaspoon dried oregano

1 teaspoon dried thyme

1/2 teaspoon red pepper flakes (adjust to taste)

6 cups vegetable broth

2 cans (15 oz each) cannellini beans, rinsed and drained

1 can (14.5 oz) diced tomatoes, with juice

2 cups kale or Swiss chard, chopped

Salt and pepper to taste

Juice of 1 lemon

Fresh parsley, chopped (for garnish)

Heat the Oil: In a large pot over medium heat, add the olive oil. Once hot, add the diced onion and sauté until translucent, about 4-5 minutes.

    Add Vegetables: Stir in the minced garlic, sliced carrots, and chopped celery. Sauté for another 5-7 minutes, until the vegetables start to soften.

      Incorporate Herbs and Spices: Add the dried oregano, thyme, and red pepper flakes to the pot. Stir well, allowing the flavors to blend for about 1 minute.

        Add Broth and Beans: Pour in the vegetable broth and bring the mixture to a gentle boil. Add the rinsed cannellini beans and the diced tomatoes with their juice. Reduce heat and let simmer for 15-20 minutes, stirring occasionally.

          Add Greens: Fold in the chopped kale or Swiss chard. Allow the soup to simmer for an additional 5-10 minutes, until the greens have wilted and tender.

            Season: Season the soup with salt and pepper to taste. Just before serving, stir in the lemon juice for a bright kick of flavor.
