1 tbsp olive oil

1 medium onion, diced

3 cloves garlic, minced

2 medium carrots, diced

2 celery stalks, diced

1 tsp dried oregano

1 tsp dried thyme

1/2 tsp red pepper flakes (adjust to taste)

1 can (14 oz) diced tomatoes, with juices

4 cups vegetable broth

1 can (15 oz) cannellini beans, rinsed and drained

1 bunch of Tuscan kale (or Lacinato), stems removed and leaves chopped

Salt and pepper, to taste

Juice of 1 lemon

Fresh parsley, chopped (for garnish)

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Stir in the minced garlic, diced carrots, and celery, and cook for an additional 3-4 minutes until softened.

    Add Herbs and Spice: Sprinkle in the dried oregano, thyme, and red pepper flakes, stirring to combine. Toast the spices for about 1 minute to release their flavors.

      Incorporate the Tomatoes: Pour in the diced tomatoes with their juices. Stir well and allow the mixture to simmer for about 2-3 minutes.
