Ingredients

1 lb ground beef (or a mix of beef and pork)

1/2 cup breadcrumbs

1/4 cup grated Parmesan cheese

1 large egg

2 cloves garlic, minced

1 tsp dried oregano

1 tsp dried basil

Salt and pepper to taste

1 tbsp olive oil

1 onion, diced

3 carrots, sliced

3 stalks celery, chopped

4 cups beef broth

1 can (14 oz) diced tomatoes

2 potatoes, diced

1 cup green peas (fresh or frozen)

1 tbsp Worcestershire sauce

Fresh parsley for garnish

Instructions

Prepare the Meatballs: In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, egg, minced garlic, oregano, basil, salt, and pepper. Mix until just combined. Form into meatballs, about 1 inch in diameter.

Brown the Meatballs: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the meatballs in batches, cooking until browned on all sides, about 5-7 minutes. Remove and set aside.

Sauté the Vegetables: In the same pot, add the diced onion, carrots, and celery. Sauté until vegetables are tender, about 5 minutes.

Add Liquids and Simmer: Pour in the beef broth and diced tomatoes with their juices. Add the diced potatoes and Worcestershire sauce, then bring the mixture to a boil.

Combine and Cook: Gently add the browned meatballs back to the pot. Reduce heat to a simmer, cover, and cook for 30 minutes, or until the vegetables are tender and the meatballs are cooked through.

Final Touches: Stir in the green peas and cook for an additional 5 minutes. Adjust seasoning with salt and pepper to taste.

Serve: Ladle the stew into bowls and garnish with fresh parsley. Enjoy with crusty bread or over rice!
