Hearty Cowboy Beef & Bean Bake

Ingredients
  

1 lb ground beef (preferably grass-fed)

1 medium onion, diced

2 cloves garlic, minced

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) pinto beans, drained and rinsed

1 can (14.5 oz) diced tomatoes (with green chilies for a kick)

1 cup corn kernels (fresh or frozen)

1 tbsp chili powder

2 tsp cumin

1 tsp smoked paprika

1 tsp oregano

Salt and pepper to taste

1 cup shredded cheddar cheese

1 cup cornbread mix (plus ingredients per package instructions)

Fresh cilantro, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Beef: In a large skillet over medium heat, brown the ground beef until fully cooked, breaking it apart with a wooden spoon. Drain any excess fat if necessary.

      Add Vegetables: Once the beef is browned, add the diced onion and minced garlic to the skillet. Sauté for about 3-4 minutes until the onions are translucent.

        Mix in Beans & Spices: Add the black beans, pinto beans, diced tomatoes, corn, chili powder, cumin, smoked paprika, oregano, and season with salt and pepper. Stir thoroughly to combine all ingredients and allow to simmer for about 5 minutes for the flavors to meld.

          Prepare Cornbread Topping: In a separate bowl, prepare the cornbread mix according to the package instructions.

            Assemble the Bake: In a large baking dish, spread the beef and bean mixture evenly across the bottom. Gently pour the cornbread batter over the top, spreading it out with a spatula to cover as much of the meat mixture as possible.

              Bake: Place the dish in the preheated oven and bake for 25-30 minutes, or until the cornbread topping is golden brown and a toothpick inserted comes out clean.

                Add Cheese: Five minutes before the bake is done, remove it from the oven, sprinkle the shredded cheddar cheese on top, and return it to the oven until the cheese is melted and bubbly.

                  Garnish and Serve: Once done, let the dish cool for a few minutes. Garnish with fresh cilantro before serving.
