1.5 lbs boneless, skinless chicken thighs

4 cups low-sodium chicken broth

2 cups water

2 tablespoons olive oil

1 large onion, chopped

3 cloves garlic, minced

3 medium carrots, sliced

2 stalks celery, diced

1 medium potato, diced

1 cup frozen peas

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 bay leaf

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Prep the Chicken: Cut the chicken thighs into bite-sized pieces, then season with salt and pepper.

    Sauté Aromatics: In a large pot, heat olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent. Add the minced garlic and cook for an additional 1 minute, stirring frequently.

      Brown the Chicken: Increase the heat to medium-high and add the chicken pieces to the pot. Cook for about 5-7 minutes until the chicken is browned on all sides (it doesn’t need to be cooked through).

        Build Flavor: Add the sliced carrots, diced celery, diced potato, dried thyme, dried rosemary, and bay leaf to the pot. Stir well to combine all the ingredients.
