1 cup dried green or brown lentils, rinsed

3 cups vegetable broth (or water)

1 medium onion, finely diced

2 cloves garlic, minced

1 medium bell pepper, finely diced (any color)

1 tablespoon olive oil

1 cup barbecue sauce (your favorite brand or homemade)

1 tablespoon soy sauce or tamari

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon chili powder

Salt and pepper, to taste

4 whole wheat hamburger buns

Fresh parsley or cilantro, for garnish (optional)

Cook the Lentils: In a medium pot, add the rinsed lentils and vegetable broth. Bring to a boil, then reduce heat and let simmer covered for about 25-30 minutes, or until lentils are tender. Drain any excess liquid if necessary and set aside.

    Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the diced onion and bell pepper. Sauté for about 5-7 minutes, or until softened. Add the minced garlic and cook for another minute, until fragrant.

      Combine Ingredients: Stir in the cooked lentils to the skillet with the sautéed vegetables. Then add the barbecue sauce, soy sauce, smoked paprika, cumin, chili powder, salt, and pepper. Mix well to combine all the ingredients.

        Simmer: Allow the mixture to cook on low heat for about 10 minutes, stirring occasionally, so that the flavors meld together and the mixture thickens slightly.

          Prepare the Buns: While the lentil mixture is simmering, you can toast the hamburger buns if desired. This adds a nice crunch and helps hold the hearty filling.

            Assemble: Spoon the hearty barbecue lentil mixture generously onto the bottom half of each bun. Top with fresh parsley or cilantro if using, then place the top bun over.
