1 cup almond flour

1 cup fresh spinach, finely chopped

1/2 cup feta cheese, crumbled

1/4 cup grated Parmesan cheese

2 large eggs

1/4 cup coconut oil, melted

1/2 teaspoon baking powder

1/2 teaspoon garlic powder

1/4 teaspoon onion powder

1/2 teaspoon black pepper

1/4 teaspoon salt

Optional: Chopped fresh herbs (like dill or parsley) for garnish

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Prepare the Ingredients: In a large mixing bowl, combine the almond flour, baking powder, garlic powder, onion powder, black pepper, and salt. Mix well until all dry ingredients are incorporated.

      Mix in Wet Ingredients: In another bowl, whisk the eggs and melted coconut oil together. Pour this mixture into the bowl with the dry ingredients, mixing until a thick dough forms.

        Incorporate Spinach and Feta: Gently fold in the chopped spinach and crumbled feta cheese until evenly distributed in the dough.

          Shape the Cookies: Scoop tablespoon-sized portions of dough and form into cookie shapes. Place them on the prepared baking sheet, leaving some space between each cookie as they will spread slightly.

            Bake: Bake in the preheated oven for 15-20 minutes, or until the edges are lightly golden and the cookies appear firm.

              Cool and Serve: Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack. Optionally, sprinkle with fresh herbs before serving. Enjoy warm or at room temperature!
