Ingredients

1 medium zucchini (about 1 cup, grated and moisture squeezed out)

1 cup whole wheat flour

1/2 cup unsweetened cocoa powder

1/2 teaspoon baking soda

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 teaspoon cinnamon

1/2 cup honey or maple syrup

1/4 cup unsweetened applesauce

1/4 cup Greek yogurt (or a dairy-free alternative)

2 large eggs

1 teaspoon vanilla extract

1/3 cup dark chocolate chips (optional, for extra indulgence)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners or spray with cooking spray.

Prep the Zucchini: Rinse and dry the zucchini. Grate it using the large holes of a box grater. Squeeze out excess moisture using a clean kitchen towel or paper towels. Set aside.

Mix the Dry Ingredients: In a medium mixing bowl, combine the whole wheat flour, cocoa powder, baking soda, baking powder, salt, and cinnamon. Whisk until well incorporated.

Prepare the Wet Ingredients: In a large mixing bowl, combine honey (or maple syrup), applesauce, Greek yogurt, eggs, and vanilla extract. Whisk until smooth and fully blended.

Combine Ingredients: Gradually add the dry ingredients into the wet mixture, stirring gently with a spatula or wooden spoon until just combined. Avoid overmixing.

Fold in Zucchini and Chocolate Chips: Carefully fold the grated zucchini and dark chocolate chips into the batter until evenly distributed.

Fill Muffin Tin: Divide the batter evenly among the prepared muffin cups, filling each about 3/4 full.

Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.

Cool and Serve: Once baked, remove the muffins from the oven and allow them to cool in the muffin tin for 5 minutes before transferring them to a wire rack to cool completely. Enjoy warm or at room temperature!
