1 cup Medjool dates, pitted

1 cup raw almonds

½ cup unsweetened cocoa powder

½ cup rolled oats

2 tablespoons almond butter (or any nut butter)

1 teaspoon vanilla extract

A pinch of sea salt

¼ cup shredded coconut (optional, for coating)

¼ cup dark chocolate chips (optional, for a richer taste)

Instructions
 

Prepare the Ingredients: Start by pitting the Medjool dates if they aren’t already pitted. Measure out all the ingredients to streamline the process.

    Blend the Base: In a food processor, combine the almonds and pulse until they are finely chopped (but not flour). Add the pitted dates, cocoa powder, rolled oats, almond butter, vanilla extract, and a pinch of sea salt.

      Process Until Combined: Blend all the ingredients together until well combined. The mixture should be sticky and hold together when pressed. If it seems too dry, add a teaspoon of water or extra almond butter.

        Chill the Mixture: Transfer the mixture into a bowl and refrigerate for about 15-20 minutes. This will make it easier to form the balls.

          Form the Balls: Once chilled, remove from the refrigerator. Use your hands to grab about a tablespoon of the mixture and roll it between your palms to form a ball. Repeat until all the mixture is shaped into balls.

            Coat the Balls (optional): If you'd like, roll the balls in shredded coconut for a fun outer coating, or leave them as is.

              Melt Dark Chocolate (optional): If using dark chocolate chips, melt them in a microwave-safe bowl in short bursts (about 15-20 seconds) until smooth. Drizzle or dip the balls into melted chocolate and place on a parchment-lined tray to set.

                Refrigerate Again: Once coated, place the chocolate date balls in the fridge for another 10 minutes to let the chocolate firm up.
