1 lb (450g) boneless, skinless chicken breast, thinly sliced

2 tablespoons soy sauce (low sodium)

1 tablespoon cornstarch

1 tablespoon olive oil

1 red bell pepper, sliced into strips

1 yellow bell pepper, sliced into strips

1 medium zucchini, sliced into half-moons

1 cup broccoli florets

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

2 green onions, sliced

1 tablespoon sesame oil (optional)

Cooked brown rice or quinoa, for serving

Sesame seeds, for garnish

Instructions
 

Marinate the Chicken: In a medium bowl, combine the sliced chicken with soy sauce and cornstarch. Mix well and let it marinate for about 15 minutes.

    Prep Your Veggies: While the chicken is marinating, prepare your vegetables by washing and slicing all ingredients into uniform pieces to ensure even cooking.

      Heat the Oil: In a large wok or non-stick skillet, heat the olive oil over medium-high heat until hot.

        Cook the Chicken: Add the marinated chicken to the pan in a single layer. Let it cook for about 5-7 minutes until it turns golden brown and is cooked through, stirring occasionally. Remove the chicken from the pan and set aside.

          Stir-Fry the Vegetables: In the same pan, add the minced garlic and grated ginger. Sauté for about 30 seconds until fragrant. Add the bell peppers, zucchini, and broccoli florets. Stir-fry for about 4-5 minutes until the vegetables are tender-crisp.

            Combine and Flavor: Return the cooked chicken to the pan. If using, drizzle the sesame oil over the stir-fry. Stir everything together and cook for another 2 minutes to combine all the flavors.

              Garnish and Serve: Remove from heat and sprinkle with sliced green onions and sesame seeds. Serve hot over cooked brown rice or quinoa.
