1/2 cup vanilla protein powder

1/4 cup honey or maple syrup

1/4 cup unsweetened applesauce

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 cup fresh blueberries (or frozen, if fresh are unavailable)

1/2 teaspoon cinnamon (optional)

1/4 cup chopped walnuts or pecans (optional, for added crunch)

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with muffin liners or grease it lightly with cooking spray.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, almond flour, protein powder, baking powder, baking soda, salt, and cinnamon (if using). Whisk until well combined.
