1 lb boneless, skinless chicken thighs

1 medium pineapple, peeled, cored, and cut into bite-sized chunks

1 bell pepper (red or yellow), sliced

1 small red onion, chopped

1/2 cup BBQ sauce (your favorite brand or homemade)

2 tablespoons soy sauce

1 tablespoon honey

1 teaspoon garlic powder

1 teaspoon ginger powder

1 tablespoon olive oil

Salt and black pepper, to taste

Fresh cilantro, chopped (for garnish)

4 large pieces of aluminum foil

Preheat the Grill or Oven: If using a grill, preheat it to medium heat (around 375°F). If baking, preheat your oven to 400°F.

    Prepare the Marinade: In a large mixing bowl, combine the BBQ sauce, soy sauce, honey, garlic powder, ginger powder, olive oil, salt, and black pepper.

      Marinate the Chicken: Add the chicken thighs to the marinade and toss well to ensure they're evenly coated. Let them marinate for at least 15 minutes.

        Prepare the Foil Packets: On a clean surface, lay out each piece of aluminum foil. Place a portion of the marinated chicken in the center of each piece, followed by an equal share of pineapple chunks, sliced bell pepper, and chopped onion.
