Hatch Green Chili Taco Cups

Ingredients
  

1 lb ground beef or turkey

1 can (15 oz) Hatch green chili (diced)

1 cup black beans (drained and rinsed)

1 cup corn (frozen or canned, drained)

1 teaspoon chili powder

1 teaspoon cumin

Salt and pepper to taste

1 package (10 oz) wonton wrappers

1 cup shredded cheddar cheese

1 cup sour cream (for serving)

1 avocado (sliced, for garnish)

Fresh cilantro (for garnish)

Instructions
 

Preheat the Oven:

    Preheat your oven to 375°F (190°C).

      Cook the Meat:

        In a large skillet over medium heat, brown the ground beef or turkey until fully cooked, breaking it into small pieces with a spatula. Drain any excess fat.

          Add Ingredients:

            Stir in the diced Hatch green chili, black beans, corn, chili powder, cumin, salt, and pepper. Cook for an additional 5 minutes, allowing the flavors to meld together.

              Prepare the Wonton Cups:

                Gently press the wonton wrappers into the cups of a muffin tin, ensuring they are molded to the shape of the cup. You can lightly oil the tin to prevent sticking if desired.

                  Fill the Cups:
