Hatch Green Chili Mac and Cheese Bites

2 cups elbow macaroni

1 tablespoon olive oil

4 tablespoons butter

1/4 cup all-purpose flour

2 cups whole milk

2 cups shredded sharp cheddar cheese

1 cup shredded pepper jack cheese

1 can (4 oz) diced Hatch green chiles, drained

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

1/2 cup breadcrumbs

1/4 cup grated Parmesan cheese

Cooking spray or oil for greasing

Instructions
 

Cook the Pasta: Bring a pot of salted water to a boil and cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

    Make the Cheese Sauce: In a large saucepan, heat the olive oil and butter over medium heat. Once melted, whisk in the flour and cook for about 1-2 minutes until lightly golden. Gradually whisk in the milk, stirring constantly until the mixture thickens, about 5 minutes.

      Add Cheeses and Spices: Remove the saucepan from heat and stir in the shredded cheddar and pepper jack cheeses until melted and smooth. Mix in the diced Hatch green chiles, garlic powder, onion powder, smoked paprika, salt, and pepper. Combine until everything is evenly coated.

        Combine Pasta and Sauce: Add the cooked macaroni to the cheese sauce and stir until well combined. Allow the mixture to cool slightly.

          Prepare the Bites: Preheat your oven to 375°F (190°C) and grease a mini muffin tin with cooking spray or oil. Once the macaroni mixture is cool enough to handle, scoop about 2 tablespoons of the mixture into each muffin cup, pressing down gently.
