Ingredients

1 cup cornmeal

1 cup all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1 cup buttermilk

1/2 cup unsalted butter, melted

2 large eggs

1 cup shredded sharp cheddar cheese

1 cup diced Hatch green chilies (fresh or canned)

1 cup corn kernels (fresh or frozen)

1 teaspoon cumin powder

1/2 teaspoon paprika

1/4 teaspoon cayenne pepper (optional for extra heat)

Fresh cilantro, for garnish

Instructions

Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish with a bit of butter or non-stick spray.

Dry Ingredients: In a large mixing bowl, whisk together the cornmeal, flour, baking powder, salt, cumin, paprika, and cayenne pepper until well combined.

Wet Ingredients: In another bowl, mix the buttermilk, melted butter, and eggs until smooth.

Combine Mixtures: Pour the wet ingredients into the dry ingredients and gently stir until just combined. Avoid over-mixing to keep the cornbread light and fluffy.

Add Extras: Fold in the shredded cheese, diced Hatch green chilies, and corn kernels until evenly distributed.

Transfer to Dish: Pour the batter into the prepared baking dish, spreading it out evenly.

Bake: Bake in the preheated oven for about 30-35 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out clean.

Cool & Serve: Let the casserole cool for about 10 minutes before slicing. Garnish with fresh cilantro and serve warm.
