1 lb ground turkey

1 cup Hatch green chilies (fresh or roasted, diced)

1 cup spinach (fresh)

4 large eggs

1 cup shredded cheese (cheddar or Monterey Jack)

4 whole wheat tortillas

1 tablespoon olive oil

Salt and pepper to taste

1 teaspoon cumin

1 teaspoon garlic powder

1 avocado (sliced, for topping)

Salsa (for serving)

Cook the Turkey: In a large skillet, heat the olive oil over medium heat. Add the ground turkey and cook until browned, breaking it apart with a spoon. Season with salt, pepper, cumin, and garlic powder. Stir in the diced Hatch green chilies and continue to cook for an additional 5 minutes until the chilies are heated through.

    Scramble the Eggs: In a separate bowl, whisk the eggs with a pinch of salt and pepper. Pour the eggs into the skillet with the turkey and chilies. Add the fresh spinach. Stir gently until the eggs are fully cooked and the spinach has wilted, about 3-4 minutes.

      Warm the Tortillas: While the eggs and turkey mixture finishes cooking, warm the whole wheat tortillas in a dry skillet or microwave until pliable.
