Hatch Chili Quinoa Bowls

1 cup quinoa, rinsed

2 cups vegetable broth

2 tablespoons olive oil

1 small onion, diced

3 cloves garlic, minced

1 cup roasted hatch green chiles, chopped (fresh or canned)

1 can (15 oz) black beans, drained and rinsed

1 cup corn (fresh, frozen, or canned)

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and pepper, to taste

1 avocado, sliced

1/2 cup cherry tomatoes, halved

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions
 

Cook the Quinoa: In a medium saucepan, combine the rinsed quinoa and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the quinoa is fluffy and liquid is absorbed. Remove from heat and let it sit covered for 5 minutes. Fluff with a fork.

    Sauté Aromatics: In a large skillet, heat olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until translucent. Add minced garlic and sauté for an additional minute until fragrant.

      Add Chili Flavors: Stir in the roasted hatch green chiles, black beans, corn, cumin, smoked paprika, salt, and pepper. Cook for 5-7 minutes, stirring occasionally, until everything is heated through.

        Combine: Gently fold the cooked quinoa into the hatch chili mixture until well incorporated. Taste and adjust seasoning if necessary.

          Assemble Bowls: Divide the quinoa and hatch chili mixture among serving bowls. Top with sliced avocado, cherry tomatoes, and a sprinkle of fresh cilantro.
