Ingredients

1 lb boneless, skinless chicken thighs (cut into bite-sized pieces)

2 cups cooked white or brown rice

1 cup roasted Hatch green chiles (fresh or canned, diced)

1 medium onion (diced)

3 cloves garlic (minced)

1 cup corn (fresh or frozen)

1 cup black beans (canned, drained, and rinsed)

1 tsp cumin

1/2 tsp smoked paprika

Salt and pepper to taste

1 cup shredded Monterey Jack cheese

1/4 cup fresh cilantro (chopped)

2 tbsp olive oil

Lime wedges (for serving)

Sour cream or Greek yogurt (optional, for serving)

Instructions

Sauté the Aromatics: In a large skillet, heat olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.

Cook the Chicken: Add the chicken thighs to the skillet, season with cumin, smoked paprika, salt, and pepper. Cook for about 7-10 minutes until the chicken is browned and cooked through, stirring occasionally.

Combine Ingredients: Stir in the diced Hatch green chiles, corn, and black beans. Cook until everything is heated through, about 3-5 minutes. Taste and adjust seasoning if necessary.

Prepare the Rice: In a large serving bowl or individual bowls, layer the cooked rice as the base. Top with the chicken and Hatch chili mixture.

Add Toppings: Sprinkle shredded Monterey Jack cheese over the top of each bowl, followed by fresh cilantro.

Serve with Lime Wedges: Serve the bowls with lime wedges and a dollop of sour cream or Greek yogurt if desired for added creaminess.

Enjoy! Mix and enjoy the flavorful combination of spices, chiles, and hearty ingredients!
