1 (30 oz) bag frozen hash browns, thawed

2 cups sharp cheddar cheese, shredded

1 cup sour cream

1 cup cream of chicken soup (or cream of mushroom for a vegetarian option)

1/2 cup onion, finely chopped

1/2 cup bell pepper, finely chopped (optional)

1/4 cup butter, melted

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

1 cup corn flakes, crushed (for topping)

2 tablespoons parsley, chopped (for garnish)

Instructions
 

Preheat the oven: Preheat your oven to 350°F (175°C).

    Prepare the hash browns: In a large bowl, combine the thawed hash browns, melted butter, salt, pepper, garlic powder, and onion powder. Mix well until all the hash browns are evenly coated.

      Combine the wet ingredients: In another bowl, mix together the sour cream, cream of chicken soup, chopped onion, and bell pepper (if using) until smooth.

        Combine all ingredients: Fold the wet mixture into the hash brown mixture until fully combined. Gradually add in 1.5 cups of the shredded cheddar cheese, mixing until evenly distributed.

          Transfer to baking dish: Pour the mixture into a greased 9x13-inch baking dish, spreading it out evenly.

            Add the topping: In a small bowl, combine the crushed corn flakes with the remaining 0.5 cup of shredded cheddar cheese. Sprinkle this topping evenly over the casserole.

              Bake: Place the casserole in the preheated oven and bake for 45-50 minutes, or until the top is golden brown and the casserole is bubbly.

                Cool and garnish: Remove from the oven and let it cool for about 10 minutes. Garnish with chopped parsley before serving.
