Ingredients

For the Crust:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup brown sugar

1 tsp ground cinnamon

For the Cheesecake Filling:

2 (8 oz) packages cream cheese, softened

¾ cup granulated sugar

½ cup brown sugar

1 tsp vanilla extract

1 tsp butterscotch extract

3 large eggs

¾ cup heavy cream

1 cup butterscotch sauce

For the Topping:

1 cup heavy whipping cream

¼ cup powdered sugar

Butterscotch sauce, for drizzling

Whipped cream, for garnish

Crushed butterscotch candies, for garnish (optional)

Instructions

Prepare the Crust:

    - Preheat your oven to 325°F (163°C).

      - In a medium bowl, mix the graham cracker crumbs, melted butter, brown sugar, and ground cinnamon until the mixture resembles wet sand.

        - Press the crust mixture evenly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then let it cool while you prepare the filling.

          Make the Cheesecake Filling:

            - In a large bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy, about 2-3 minutes.

              - Add the granulated sugar, brown sugar, vanilla extract, and butterscotch extract. Mix until well combined.

                - Incorporate the eggs one at a time, mixing well after each addition.

                  - Add the heavy cream and butterscotch sauce. Stir until smooth and fully combined.

                    Bake the Cheesecake:

                      - Pour the cheesecake filling over the cooled crust in the springform pan.

                        - Bake in the preheated oven for 60-70 minutes, or until the edges are set, but the center is slightly jiggly.

                          - Turn off the oven and crack the door to let the cheesecake cool inside for about 1 hour. This helps prevent cracking.

                            Chill the Cheesecake:

                              - After cooling, remove the cheesecake from the oven and let it cool to room temperature.

                                - Cover and refrigerate for at least 4 hours or overnight for better flavor.

                                  Prepare the Topping:

                                    - In a separate bowl, whip the heavy cream with powdered sugar until stiff peaks form.

                                      - Spread the whipped cream over the chilled cheesecake evenly.

                                        Serve:

                                          - Drizzle butterscotch sauce on top of the whipped cream, and add crushed butterscotch candies as desired for an extra touch.

                                            - Carefully release the cheesecake from the springform pan, slice, and enjoy your magical dessert!
