2 boneless, skinless chicken breasts

2 tablespoons harissa paste

1 tablespoon olive oil

Salt and pepper to taste

4 cups mixed salad greens (arugula, spinach, and romaine)

1 cup cherry tomatoes, halved

½ cucumber, thinly sliced

½ red onion, thinly sliced

1 avocado, diced

¼ cup crumbled feta cheese

¼ cup olives (kalamata or green), pitted and halved

Juice of 1 lemon

Instructions
 

Marinate the Chicken: In a bowl, mix the harissa paste, olive oil, salt, and pepper. Add the chicken breasts, ensuring they are well coated. Cover and let marinate for at least 30 minutes (or up to 4 hours in the refrigerator for deeper flavor).

    Cook the Chicken: Preheat your grill or stovetop grill pan over medium-high heat. Grill the chicken for about 6-7 minutes on each side or until fully cooked and the internal temperature reaches 165°F (75°C). Once cooked, remove from the grill and allow to rest for 5 minutes.

      Prepare the Salad Base: While the chicken is resting, in a large salad bowl, combine the mixed greens, cherry tomatoes, cucumber, red onion, avocado, feta cheese, and olives.

        Slice the Chicken: After resting, slice the chicken breasts into thin strips.

          Assemble the Salad: On top of the salad base, add the sliced chicken. Drizzle with lemon juice and toss gently to combine all ingredients.
