Ingredients

1 lb ground beef

1 cup mushrooms, sliced (button or cremini)

1 medium onion, diced

2 cloves garlic, minced

1 cup cooked rice (white or brown)

1 cup cheddar cheese, shredded (plus extra for topping)

1 cup beef broth

1 tablespoon Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon seasoned salt

½ teaspoon black pepper

1 tablespoon olive oil

1 cup breadcrumbs (regular or panko)

Fresh parsley, chopped (for garnish)

Instructions

Preheat your oven to 350°F (175°C).

In a large skillet, heat the olive oil over medium heat. Add the diced onions and cook until translucent, about 5 minutes.

Add the minced garlic and sliced mushrooms to the skillet and sauté until the mushrooms are soft and any liquid has evaporated, about 5-7 minutes.

Push the vegetables to one side of the skillet and add the ground beef. Cook, breaking it apart with a spatula, until browned and cooked through, about 7-10 minutes. Drain excess grease if necessary.

Stir in the cooked rice, beef broth, Worcestershire sauce, thyme, seasoned salt, and black pepper. Mix until well combined and allow to simmer for 5 minutes.

Remove from heat and fold in the cheddar cheese until melted and combined.

Transfer the mixture to a greased 8x8 inch baking dish, spreading it out evenly.

In a small bowl, mix together the breadcrumbs with a tablespoon of melted butter (optional for added flavor). Sprinkle the breadcrumb mixture evenly over the beef and mushroom mixture.

Add a sprinkle of extra cheddar cheese on top of the breadcrumbs.

Bake in the preheated oven for 25-30 minutes, or until the topping is golden brown and bubbly.

Allow to cool for a few minutes before garnishing with chopped parsley and serving warm.
