500g chicken breast, diced

400g sweet potatoes, peeled and diced

1 large onion, finely chopped

2 cloves garlic, minced

1 cup spinach, fresh or frozen

1 cup shredded cheese (cheddar or mozzarella)

1 cup chicken broth

1 tsp paprika

1 tsp dried thyme

1 tsp oregano

Salt and pepper to taste

2 tbsp olive oil

1/2 cup cream (optional for creamier texture)

Fresh parsley for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 200°C (400°F).

    Prepare the Chicken: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced chicken breast and season with salt, pepper, paprika, thyme, and oregano. Cook for about 5-7 minutes, until the chicken is browned and cooked through. Remove from heat and set aside.

      Sauté Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Sauté the chopped onion and minced garlic until translucent and fragrant, about 3-4 minutes. If using frozen spinach, add it now and cook until heated through.

        Combine Ingredients: In a large mixing bowl, combine the cooked chicken, sautéed onions and garlic, sweet potatoes, and spinach. Pour in the chicken broth and cream (if using) and stir until well combined.

          Layer in Baking Dish: Transfer the mixture to a greased baking dish. Spread it out evenly.

            Add Cheese: Sprinkle the shredded cheese evenly over the top of the casserole.

              Bake: Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. After 25 minutes, remove the foil and bake for an additional 15-20 minutes, or until the sweet potatoes are tender and the cheese is bubbly and golden.

                Garnish and Serve: Remove from the oven and let it cool for 5 minutes. Garnish with fresh parsley before serving.
