Ingredients

2 ripe bananas, mashed

1 cup rolled oats

1/4 cup almond butter (or any nut butter of your choice)

1/4 cup honey or maple syrup (for a vegan option)

1/2 teaspoon vanilla extract

1/2 teaspoon baking powder

1/2 teaspoon cinnamon

A pinch of salt

1/4 cup dark chocolate chips or dried fruits (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking tray with parchment paper.

Mash the Bananas: In a large mixing bowl, mash the ripe bananas until smooth. This should yield about 1 cup of banana puree.

Combine Ingredients: Add the rolled oats, almond butter, honey (or maple syrup), vanilla extract, baking powder, cinnamon, and salt to the bowl. Mix well until all the ingredients are fully combined.

Add Optional Ingredients: Fold in the dark chocolate chips or dried fruits if you are using them.

Scoop the Dough: Using a tablespoon or a cookie scoop, drop cookie dough balls onto the prepared baking tray, about 2 inches apart, as they will spread slightly during baking.

Flatten the Cookies: Gently flatten the cookie balls with the back of a fork or your fingers to create uniform cookie shapes.

Bake: Place the tray in the preheated oven and bake for 12-15 minutes, or until the cookies are lightly golden around the edges.

Cool and Serve: Remove from the oven and allow the cookies to cool on the baking tray for about 5 minutes before transferring them to a wire rack to cool completely. Enjoy your guilt-free treats warm or store them in an airtight container for up to a week!
