Grilled Veggie Quesadilla

4 whole wheat tortillas

1 cup shredded cheese (mix of Monterey Jack and cheddar)

1 medium zucchini, thinly sliced

1 red bell pepper, diced

1 yellow bell pepper, diced

1 cup fresh spinach

1/2 cup corn kernels (fresh or frozen)

1 small red onion, thinly sliced

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper to taste

Optional toppings: sour cream, salsa, or guacamole

Instructions
 

Prepare the vegetables: In a large mixing bowl, combine the sliced zucchini, diced red and yellow bell peppers, fresh spinach, corn kernels, and red onion. Drizzle with olive oil and sprinkle with garlic powder, smoked paprika, salt, and pepper. Toss until the vegetables are well coated.

    Grill the veggies: Preheat your grill (or grill pan) to medium-high heat. Add the seasoned veggies and grill for about 5-7 minutes, stirring occasionally, until the veggies are tender and have nice grill marks. Remove from heat and set aside.

      Assemble the quesadillas: Lay out two tortillas on a clean surface. On one half of each tortilla, sprinkle a layer of shredded cheese, followed by a generous amount of the grilled veggie mixture, then another sprinkle of cheese on top. Fold the other half of the tortilla over to create a semicircle.

        Grill the quesadillas: Wipe down the grill (or pan) with a little olive oil to prevent sticking. Place the quesadillas on the grill and cook for about 3-4 minutes on each side, or until the tortillas are golden brown and the cheese is melted.

          Serve: Remove the quesadillas from the grill and let them cool for a minute before slicing them into wedges. Serve with optional toppings such as sour cream, salsa, or guacamole.
