Grilled Shrimp Tacos

This quick and easy recipe features marinated shrimp grilled to perfection, enveloped in warm corn tortillas and topped with crunchy red cabbage, creamy avocado, and zesty lime juice. Ingredients
  

1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

2 tablespoons lime juice (freshly squeezed)

1 tablespoon honey

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon chili powder

½ teaspoon cumin

Salt and pepper to taste

8 small corn tortillas

1 cup red cabbage, thinly sliced

½ cup fresh cilantro, chopped

1 avocado, sliced

1 lime, cut into wedges

Optional: hot sauce for serving

Instructions
 

Marinate the Shrimp: In a medium bowl, combine olive oil, lime juice, honey, minced garlic, smoked paprika, chili powder, cumin, salt, and pepper. Whisk until well blended. Add the shrimp to the marinade and toss to coat. Let it marinate for 20-30 minutes in the refrigerator.

    Prepare the Grill: Preheat your grill to medium-high heat. If using skewers, soak wooden skewers in water for about 30 minutes to prevent burning.

      Skewer the Shrimp (if desired): Thread the marinated shrimp onto the skewers, leaving a small space between each shrimp. This will help them grill evenly.

        Grill the Shrimp: Place the shrimp skewers directly on the grill grates and cook for 2-3 minutes per side, or until they turn pink and opaque. If grilling without skewers, place the shrimp directly on the grill and cook, turning occasionally.

          Warm the Tortillas: While the shrimp is grilling, warm the corn tortillas on the grill for about 30 seconds on each side until they are slightly charred and pliable.

            Assemble the Tacos: Once the shrimp are cooked, remove them from the grill. Place a generous portion of grilled shrimp onto each tortilla, then top with sliced red cabbage, fresh cilantro, and avocado slices.

              Serve: Squeeze fresh lime juice over the assembled tacos, add hot sauce if desired, and enjoy right away!
