Grilled Peach Chicken Salad

2 boneless, skinless chicken breasts

2 ripe peaches, halved and pitted

6 cups mixed salad greens (arugula, spinach, and romaine)

1 cup cherry tomatoes, halved

1/2 red onion, thinly sliced

1/4 cup feta cheese, crumbled

1/4 cup walnuts, toasted

2 tablespoons olive oil

1 tablespoon balsamic vinegar

1 teaspoon honey

Salt and pepper, to taste

Fresh basil leaves, for garnish

Prepare the Chicken: Season the chicken breasts with salt, pepper, and a tablespoon of olive oil. Allow them to marinate for about 15 minutes while you prepare the grill.

    Preheat the Grill: Heat your grill to medium-high heat. If using a grill pan, place it on the stove over medium heat.

      Grill the Chicken: Place the marinated chicken breasts on the grill. Cook for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C). Once cooked, remove from the grill and let them rest.

        Grill the Peaches: Add the peach halves, cut side down, onto the grill. Grill for about 2-3 minutes until tender and grill marks appear. Remove from heat and let cool slightly.

          Prepare the Salad Base: In a large salad bowl, combine the mixed greens, cherry tomatoes, and red onion.

            Slice the Chicken: Once the chicken has rested, slice it into strips.
