Grilled Peach & Burrata Salad

Ingredients
  

4 ripe peaches, halved and pitted

8 oz burrata cheese

4 cups mixed greens (arugula, spinach, and baby kale)

1/4 cup balsamic glaze

1/4 cup extra-virgin olive oil

1/4 cup toasted pine nuts

1/4 cup fresh basil leaves, torn

Salt and freshly cracked black pepper, to taste

Instructions
 

Preheat the Grill: Preheat your grill to medium-high temperature (about 400°F/200°C).

    Prepare the Peaches: Brush the cut sides of the peach halves with a little olive oil and lightly season them with salt and pepper.

      Grill the Peaches: Place the peaches cut-side down on the grill. Grill for about 3-4 minutes until they have nice grill marks and are lightly caramelized. Turn them over and grill for an additional 2-3 minutes just to warm them through. Remove from the grill and let them cool slightly.

        Assemble the Salad: In a large shallow bowl or platter, arrange the mixed greens as a base.

          Add the Grilled Peaches: Gently place the grilled peach halves on top of the greens, cut side facing up.

            Top with Burrata: Tear the burrata into pieces and arrange them evenly among the peaches.

              Dress the Salad: Drizzle the salad with extra-virgin olive oil and balsamic glaze. Sprinkle with toasted pine nuts and torn basil leaves.
