Ingredients

1 pre-made pizza dough (or homemade if preferred)

2 ripe peaches, pitted and sliced into thin wedges

1 tablespoon olive oil

1 cup fresh arugula

1 cup fresh mozzarella cheese, torn into pieces

1/2 cup goat cheese, crumbled

1 tablespoon balsamic glaze (plus extra for drizzling)

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

Salt and freshly ground black pepper to taste

Meal prep flour for dusting

Instructions

Preheat the Grill: Preheat your grill to medium-high heat (about 400°F). If using charcoal, allow the coals to turn white before placing meat.

Prepare the Peaches: In a mixing bowl, combine the peach wedges with olive oil, a pinch of salt, and pepper. Toss well to coat.

Grill the Peaches: Place the peach wedges directly on the grill grates. Grill for about 2-3 minutes on each side until they’re slightly softened and have grill marks. Remove from the grill and set aside.

Shape the Pizza Dough: On a floured surface, stretch or roll out the pizza dough to your desired thickness. If using a pizza peel, you can sprinkle it with a little flour or cornmeal to prevent sticking.

Prepare the Pizza: Transfer the shaped dough to a preheated grill or a pizza stone if using. Quickly sprinkle half of the mozzarella cheese evenly over the dough, then layer on the grilled peach wedges. Top with the remaining mozzarella, crumbled goat cheese, and fresh thyme.

Grill the Pizza: Close the grill lid and cook for about 8-10 minutes, or until the cheese is melted and bubbly and the crust is golden brown. Keep an eye on it to prevent burning.

Finish with Arugula: Once cooked, carefully remove the pizza from the grill. Immediately top it with fresh arugula and drizzle with balsamic glaze.

Slice and Serve: Let the pizza cool for a minute, then slice it into wedges. Serve warm, enjoying the delightful combination of sweet grilled peaches, creamy cheeses, and peppery arugula.
