Grilled Honey Garlic Chicken Skewers

1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces

1/4 cup honey

1/4 cup soy sauce

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

2 tablespoons olive oil

1 tablespoon rice vinegar

1 teaspoon sesame oil

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional for heat)

Salt to taste

Fresh cilantro or parsley for garnish (optional)

Skewers (metal or soaked wooden)

Instructions
 

Marinate the Chicken: In a large bowl, whisk together honey, soy sauce, minced garlic, grated ginger, olive oil, rice vinegar, sesame oil, black pepper, and red pepper flakes (if using). Add the chicken pieces to the marinade and toss to coat evenly. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, preferably 2-3 hours for enhanced flavor.

    Prepare the Skewers: If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. If using metal skewers, there’s no need to prepare them.

      Preheat the Grill: Preheat your grill to medium-high heat. If using an outdoor grill, ensure the grates are clean and oiled to prevent sticking.

        Skewer the Chicken: Thread marinated chicken pieces onto the skewers, leaving a little space between each piece for even cooking. Aim for 4-5 pieces per skewer. Discard the leftover marinade.

          Grill the Skewers: Place the chicken skewers on the preheated grill. Cook for about 5-7 minutes on each side, or until the chicken is cooked through and has nice grill marks. The chicken should reach an internal temperature of 165°F (75°C). Brush with any leftover marinade during grilling for extra flavor.
