3 tablespoons olive oil

3 cloves garlic, minced

Juice of 1 large lemon

1 tablespoon red wine vinegar

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper, to taste

For the Tzatziki Sauce:

1 cup Greek yogurt

1 medium cucumber, grated and excess moisture squeezed out

2 cloves garlic, minced

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

Juice of 1/2 lemon

Salt and pepper, to taste

For the Bowl Assembly:

2 cups cooked quinoa or rice

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 red onion, thinly sliced

1/2 cup feta cheese, crumbled

Fresh parsley or mint, for garnish

Pita bread, toasted (for serving)

Marinate the Chicken: In a bowl, combine olive oil, minced garlic, lemon juice, red wine vinegar, oregano, thyme, paprika, salt, and pepper. Add the chicken thighs, ensuring they are well coated. Cover and marinate in the refrigerator for at least 30 minutes (up to overnight for deeper flavor).
