Ingredients

1 lb sirloin steak, cut into 1-inch cubes

4 tablespoons unsalted butter

4 cloves garlic, minced

2 tablespoons fresh parsley, chopped

1 teaspoon salt

1 teaspoon black pepper

1 teaspoon smoked paprika (optional)

2 tablespoons olive oil

Lemon wedges (for serving)

Instructions

Prepare the Steak: In a large bowl, add the cubed sirloin steak. Drizzle with olive oil, then sprinkle salt, black pepper, and smoked paprika (if using). Toss well to ensure the steak is evenly coated. Let it marinate while you prepare the garlic butter.

Make Garlic Butter: In a small saucepan over medium heat, melt the unsalted butter. Once melted, add the minced garlic and sauté for about 1-2 minutes until fragrant but not browned. Remove from heat and stir in chopped parsley. Set aside.

Preheat Grill: Preheat your grill or grill pan over medium-high heat. If using wooden skewers, soak them in water for 30 minutes before grilling to prevent burning.

Skewer the Steak Bites: If desired, thread the steak cubes onto skewers for easier flipping on the grill. Leave space between each piece for even cooking.

Grill the Steak Bites: Place the skewers or individual steak cubes directly onto the grill. Grill for about 2-3 minutes on one side, then flip and continue grilling for another 2-3 minutes about medium-rare (cook longer if you prefer well-done).

Baste with Garlic Butter: During the last minute of grilling, brush the steak bites generously with the garlic butter mixture. Ensure all pieces are coated to enhance flavor.

Serve: Remove from the grill and let rest for a couple of minutes. Serve warm, drizzled with any remaining garlic butter and accompanied by lemon wedges for an extra zesty touch.
