Ingredients

1 pound large shrimp, peeled and deveined

4 tablespoons unsalted butter, melted

6 cloves garlic, minced

2 tablespoons fresh lemon juice

1 teaspoon lemon zest

1 teaspoon smoked paprika

1 teaspoon dried oregano

1 teaspoon red pepper flakes (optional for heat)

Salt and pepper to taste

2 tablespoons fresh parsley, chopped (for garnish)

8-10 skewers (soaked in water if using wooden skewers)

Instructions

Marinate the Shrimp: In a large bowl, combine melted butter, minced garlic, lemon juice, lemon zest, smoked paprika, oregano, red pepper flakes, salt, and pepper. Add the shrimp and toss well to coat them in the marinade. Cover and let it marinate in the refrigerator for about 30 minutes to 1 hour.

Prepare the Skewers: If you’re using wooden skewers, make sure they’ve been soaked in water for at least 30 minutes to prevent burning on the grill. If using metal skewers, you can skip this step.

Assemble the Skewers: Once the shrimp has marinated, thread them onto the skewers, 4-5 shrimp per skewer, leaving a bit of space between each shrimp for even cooking.

Preheat the Grill: Preheat your grill to medium-high heat. Brush the grill grates lightly with oil to prevent sticking.

Grill the Shrimp: Place the shrimp skewers on the grill. Grill for about 2-3 minutes on each side, or until the shrimp turn pink and opaque, and have nice grill marks. Be careful not to overcook them, as shrimp can become rubbery.

Serve: Once cooked, remove the skewers from the grill. Garnish with freshly chopped parsley and serve immediately with lemon wedges on the side for an extra zing.

Enjoy: Pair your grilled garlic butter shrimp skewers with a fresh salad or over a bed of rice for a complete meal.
