Grilled Chicken Fajita Wraps

2 large boneless, skinless chicken breasts

2 tablespoons olive oil

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

1 teaspoon garlic powder

Salt and pepper, to taste

1 medium red bell pepper, sliced

1 medium green bell pepper, sliced

1 medium onion, sliced

4 large whole wheat tortillas

1 cup shredded cheese (cheddar or Mexican blend)

1 cup fresh cilantro, chopped

1 lime, cut into wedges

Your choice of salsa or hot sauce, for serving

Instructions
 

Marinate the Chicken: In a medium bowl, mix olive oil, chili powder, cumin, smoked paprika, garlic powder, salt, and pepper. Add chicken breasts and coat well. Cover and marinate for at least 30 minutes, or up to 2 hours in the refrigerator for more flavor.

    Prepare the Grill: Preheat your grill over medium-high heat. If using a grill pan, heat it over medium-high heat on the stove.

      Grill the Chicken: Remove the chicken from the marinade and grill for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C). Remove the chicken from the grill and let it rest for 5 minutes before slicing it into strips.

        Sauté the Vegetables: In a skillet over medium heat, add a drizzle of olive oil. Add the sliced bell peppers and onions, and season with salt and pepper. Sauté for about 5-7 minutes, or until the vegetables are tender and slightly charred.

          Assemble the Wraps: Lay out the whole wheat tortillas on a clean surface. On each tortilla, add sliced grilled chicken, sautéed peppers and onions, shredded cheese, and a sprinkle of fresh cilantro.

            Wrap It Up: Fold in the sides of the tortilla, then roll it from the bottom up to secure all the fillings. (You can use toothpicks to hold them together if desired.)

              Serve: Slice each wrap in half and serve with lime wedges and your choice of salsa or hot sauce for dipping. Enjoy your delicious grilled chicken fajita wraps!
