4 slices of sourdough bread

4 tablespoons of unsalted butter, softened

4 slices of sharp cheddar cheese

4 slices of bacon

1 ripe tomato, sliced

1 cup of fresh romaine lettuce, roughly chopped

1 tablespoon of mayonnaise

Salt and pepper to taste

Instructions
 

Cook the Bacon: In a skillet over medium heat, cook the slices of bacon until they are crispy, about 5-7 minutes. Remove the bacon and place it on a paper towel to drain excess grease.

    Prepare the Bread: Spread softened butter on one side of each slice of sourdough bread.

      Assemble the Sandwich: On the unbuttered side of two slices, layer the cheese (2 slices each), followed by the crispy bacon, tomato slices, lettuce, and a drizzle of mayonnaise. Season with a pinch of salt and pepper. Top with the remaining slices of cheese and the other two slices of bread, buttered side up.

        Grill the Sandwiches: Heat a skillet over medium heat. Carefully place the assembled sandwiches in the skillet. Cook for about 3-4 minutes on one side, or until golden brown and the cheese begins to melt. Flip the sandwiches carefully and grill the other side for another 3-4 minutes.

          Serve: Once both sides are golden brown and the cheese is fully melted, remove the sandwiches from the skillet. Let them rest for a minute before slicing in half. Serve warm with extra tomatoes or pickles if desired!
