Grilled BBQ Chicken Quesadillas

Ingredients
  

2 cups cooked chicken, shredded

1 cup BBQ sauce (your favorite brand)

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1 medium red onion, thinly sliced

1 medium green bell pepper, sliced

4 large flour tortillas

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt & pepper to taste

Fresh cilantro, chopped (for garnish)

Sour cream and sliced jalapeños (for serving)

Instructions
 

Marinate the Chicken:

    In a medium bowl, mix the shredded chicken with ½ cup of BBQ sauce, garlic powder, smoked paprika, salt, and pepper. Stir until the chicken is well-coated. Let it marinate for at least 15 minutes to enhance the flavors.

      Prepare Vegetables:

        In a skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the sliced red onion and green bell pepper. Sauté for about 6-8 minutes until they are tender and slightly caramelized. Remove from heat.

          Assemble the Quesadillas:

            Spread 1 tablespoon of BBQ sauce on one half of each tortilla. Layer on the marinated chicken, sautéed vegetables, and a generous amount of both cheddar and mozzarella cheese. Fold the tortilla over to create a half-moon shape.

              Grill the Quesadillas:

                Heat a grill or a large skillet over medium-high heat. Add a little olive oil if needed. Place the quesadillas on the grill/skillet and cook for about 4-5 minutes on each side, or until the tortillas are golden brown and the cheese is melted.

                  Cut and Serve:
