4 large flour tortillas

6 large eggs

1 cup shredded cheese (cheddar or Monterey Jack)

1/2 cup cooked chorizo (or your choice of breakfast sausage)

1/2 cup diced green chilies (canned or fresh)

1/4 cup finely chopped onion

1/4 cup diced bell pepper (optional)

2 tablespoons olive oil

Salt and pepper, to taste

Fresh cilantro, chopped (for garnish)

Sour cream or salsa (for serving)

Instructions
 

Cook the Chorizo: In a large skillet over medium heat, add the cooked chorizo. Sauté for about 2-3 minutes until heated through, then transfer to a bowl and set aside.

    Sauté Vegetables: In the same skillet, add olive oil. Sauté the chopped onion and bell pepper for about 4-5 minutes until they become soft and translucent. Add in the diced green chilies and cook for another minute. Season with salt and pepper.

      Scramble the Eggs: In a separate bowl, whisk the eggs until well combined. Pour the eggs into the skillet with the sautéed vegetables. Cook, stirring gently, until the eggs are just set, about 3-4 minutes. Remove from heat and fold in the chorizo.

        Assemble Quesadillas: Place a tortilla in the skillet over medium-low heat. Sprinkle half of the shredded cheese evenly over the tortilla. Spoon the egg and chorizo mixture on top of the cheese, and sprinkle the remaining cheese over the filling. Top with another tortilla.

          Cook Quesadilla: Cook for about 3-4 minutes until the bottom tortilla is golden brown and crispy. Carefully flip the quesadilla using a large spatula and cook for another 3-4 minutes on the other side until golden brown and the cheese is melted.

            Repeat: Remove the cooked quesadilla from the skillet and keep warm. Repeat the process for the remaining tortillas and filling.

              Serve: Slice the quesadillas into wedges and garnish with chopped cilantro. Serve hot with sour cream or salsa on the side.
