2 whole fish (such as sea bass or snapper), cleaned and scaled

4 tablespoons olive oil

Juice of 2 lemons

4 cloves garlic, minced

1 tablespoon dried oregano

1 teaspoon sea salt

½ teaspoon black pepper

Fresh herbs (such as dill and parsley), for garnish

Lemon wedges, for serving

1 cup cherry tomatoes, halved

1 medium red onion, sliced

1 cucumber, sliced

1 bell pepper, sliced

Optional: Tzatziki sauce, for dipping

Prepare the Marinade: In a bowl, combine the olive oil, lemon juice, minced garlic, oregano, sea salt, and black pepper. Whisk until well blended.

    Marinate the Fish: Place the cleaned fish in a large dish or a resealable plastic bag. Pour half of the marinade over the fish, making sure to coat both the inside and outside. Reserve the remaining marinade for basting during grilling. Let the fish marinate in the refrigerator for at least 30 minutes, but no longer than 2 hours to avoid overpowering the delicate flavor.

      Prepare the Grill: Preheat your grill to medium-high heat. If using a charcoal grill, make sure the coals are glowing and covered with a light ash. Oil the grill grates to prevent sticking.

        Prepare the Vegetables: In a separate bowl, toss the cherry tomatoes, red onion, cucumber, and bell pepper with a drizzle of olive oil, salt, and pepper. This will be served alongside the fish.

          Grill the Fish: Remove the fish from the marinade and place it on the grill. Grill the fish for 6-8 minutes on one side. Using a spatula, gently flip the fish and baste with the reserved marinade. Grill for another 6-8 minutes or until the fish flakes easily with a fork and has nice grill marks.
