3 cups cucumber, diced

2 cups ripe tomatoes, chopped

1 cup red bell pepper, diced

1 cup Kalamata olives, pitted and halved

1/2 cup red onion, thinly sliced

1 cup feta cheese, crumbled

1/4 cup extra virgin olive oil

2 tablespoons red wine vinegar

1 teaspoon dried oregano

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Prepare the Vegetables: In a large mixing bowl, combine the diced cucumbers, chopped tomatoes, diced red bell pepper, and sliced red onion. Gently toss them together.
