Greek Chicken Salad

Ingredients
  

2 cups cooked chicken breast, diced

1 cup cherry tomatoes, halved

1 cucumber, diced

1 bell pepper (red or yellow), diced

1/2 red onion, thinly sliced

1 cup Kalamata olives, pitted and halved

1 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup extra-virgin olive oil

3 tablespoons red wine vinegar

1 tablespoon dried oregano

Salt and pepper to taste

Optional: 1/4 teaspoon red pepper flakes for a kick

Instructions
 

In a large mixing bowl, combine the diced chicken, cherry tomatoes, cucumber, bell pepper, red onion, Kalamata olives, and feta cheese.

    In a separate small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, pepper, and red pepper flakes (if using) until well emulsified.

      Pour the dressing over the salad mixture and toss gently to coat all the ingredients evenly.

        Add the fresh parsley and toss again for an extra burst of flavor.

          Taste and adjust seasoning if needed, adding more salt, pepper, or vinegar to your preference.
